Pumpkin Black Bean Burritos


Combining favorite fall flavors, these burritos are nutritious and come together really quickly, using ingredients you probably already have. Loaded with vitamins, iron, fiber and taste they will keep you energized throughout your day and warm you up as the weather cools down.

The base:
1 T. vegetable oil
1/4 cup onion, diced
1/2 cup frozen corn
1 can Black beans, rinsed
1/2 cup canned pumpkin
1/2 cup stewed tomatoes, chopped
2-4 whole wheat tortillas

Sauté diced onion in a large pan. Add corn and stir until corn starts to brown. Add beans, pumpkin and tomatoes, heat through and serve on a whole wheat tortilla.

Personalize it with these:
canned or fresh chills
dried oregano
shredded cheese
sour cream or plain yogurt
fresh cilantro
